In extremely short period during the year, we have the opportunity to obtain that nature’s gift. The limited period of collecting the harvest of olives and the small produced quantity of that olive oil are the reasons for Agourelaio being sold as a limited edition in the market.

ELIA Agureleo is Extra Virgin olive oil extracted by freshly harvested olives, collected exactly before they have reached full ripeness. That kind of olive oil is, therefore, called “The Greek Gold”; gourmets also refer to it as “The champagne of olive oil.”

PRODUCTION

To extract the olive oil of the highest quality from the entire harvest, olives need to be picked up right before they reach full ripeness.

Depending on the sort of olives, the region in which they are grown, as well as the climate, the olive trees reach full ripeness in different periods every year. Collecting the harvest usually starts in the middle of October and continues up to December.

Picking up olives manually is considered to be the best way of harvesting. Although being expensive, this method guarantees the integrity of the olives as well as the quality of the olive oil.

After they have been picked up, only the juiciest and intact olives are immediately sent to the production facility so that their freshness can be preserved in the olive oil which will be extracted from them.
Due to the early phase of ripening in which they are picked up, the olives from which Agourelao is extracted give out the lowest quantities of olive oil (only 10% out of 100 кg). Despite this, their olive oil is of the highest quality, thanks to the low level of acidity. The olives that reach full ripeness, on the other hand, have considerably higher acidity levels.
